Fiery Cajun Shrimp Alfredo
Fiery Cajun Shrimp Alfredo
1 1/2 pounds large shrimp, peeled and deveined
6 tablespoons Essence, plus more for garnish, recipe follows
2 tablespoon extra-virgin olive oil
10 ounces andouille sausage, chopped
1/2 medium onion, minced
1 1/2 teaspoons crushed red pepper flakes
5 cloves garlic, minced
3 shakes Worcestershire sauce
1 pound linguine
2 cups heavy cream
1 cup whole milk
1 tablespoon freshly ground black pepper
1/2 teaspoon hot chili powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, sliced
1 1/2 cups grated Parmigiano-Reggiano
Chopped fresh flat-leaf parsley, for garnish
Place the shrimp and 3 tablespoons Essence in a large resealable plastic bag and shake. Place the bag in the refrigerator while you prepare the sauce.
Heat a deep 3-quart skillet over medium-high heat. Add 1 tablespoon olive oil and the andouille sausage. Saute sausage for 2 minutes, stirring often. Add onions and saute for 2 minutes. Add crushed red pepper flakes and garlic and cook 1 minute. Add Worcestershire sauce.
Meanwhile, cook the pasta in boiling salted water according to package instructions.
To the skillet, add cream, milk, remaining Essence, black pepper, chili powder, and salt. Stir to a consistent color. Add butter and stir until melted. Stir in cheese until melted. Lower heat to a simmer.
Heat the remaining olive oil in another large skillet over high heat and add the shrimp. Saute shrimp for 1 to 2 minutes per side or until they just start to turn pink. Add the shrimp and cooked, drained pasta to the first skillet. Stir to combine and blend flavors, about 1 minute.
Serve in a large pasta bowl. Sprinkle with parsley and Essence for garnish.

This year’s golf tournament fundraiser is being held Saturday, October 1 at Crotched Mountain Golf Club in Francestown, NH. It was moved closer to the Cooper's house because Rebecca was quite ill when the planning began. There are a rooms available at the golf club and in surrounding towns. Wolf
Wolf is played in a group of 3 or more players usually between golfers who regularly play together. It is a team competition whose teams change on every hole.
Wolf begins on the first tee with players in the group establishing an order of rotation of who is the "Wolf". Players take turns playing the Wolf based on that rotation order throughout the round.
After teeing off, the Wolf has the following options:
1) Playing the hole alone, as a "Lone-Wolf", against the other players, or
2) Choosing one of the other players as a partner for the hole based on the results of their tee shots.
The timing of the Wolf's decision about whether to play alone or partner selection vary with different interpretations of the game. Some versions suggest that the Wolf must decide to play alone or chose a partner after his/her tee-off and others say that this decision is made based on the results of the other player's tee shots. In the second case, the Wolf decides after each player's drive whether or not to select this player as a partner. Yet another interpretation says that the decision to play alone or select a partner is made after all players have hit their tee shots.
Once the teams are selected by the Wolf, the teams compete in a best ball format. In other words, the player with the low score for the hole wins a point for each of the members of his team. When players on opposing teams tie for low score, the hole is considered a draw and no points are exchanged. In the case where the Wolf is playing alone and one of the other players has the low score for the hole, the Wolf loses a point to each of the other players. A variation of Wolf bases scoring on the average score of all the players on a team instead of the low score.
