Fish Taco

Servers 4 - 6
20 corn tortillas
1 large egg
1/4 cup milk
1/4 cup water
1/2 cup flour
2 teaspoons Southwestern Essence, plus more for dusting, recipe follows
1/2 teaspoon baking powder
2 pounds firm white fish, cut into 4 by 1 by 1/4 inch strips
4 cups vegetable oil, for frying
4 cups shredded mixed green and red cabbage
Lime wedges
Chipotle Crema, recipe follows
Salsa Fresca, recipe follows
1 cup chopped fresh cilantro, garnish

Preheat the oven to 350 degrees F.
Wrap the tortillas in aluminum foil and place in the oven until soft and pliant, about 12 minutes. Remove and keep wrapped until ready to use.
In a large pot or deep fryer, heat the oil to 350 degrees F. over high heat.
In a large bowl, beat the egg with the milk and water. Add the flour, Essence, and baking powder, and whisk to make a thin batter. Dip the fish in the batter, turning to coat, and shake to remove any excess. Fry in batches in the oil until golden and crisp, about 2 minutes. Remove and drain on paper towels, and season lightly with the Essence.
Stack 2 tortillas together on plates, and top with the fish. Squeeze with lime juice, and top the fish with cabbage, crema, and salsa to taste. Garnish with cilantro and serve immediately.

Dana Farber Cancer Institute

Hello Everyone,

As most of you may know, I have spent the last year coaching college and masters swimmers how to swim faster and more efficiently. It has been a rewarding and fulfilling year, and I am beginning to get myself back into the pool and back into shape. My return to long workouts and thousands of meters of swimming is motivated by my desire to help raise money for Dana Farber Cancer Institute. I am hoping that you will support me in my goal to reach $500.

On Thursday July 13th, along with a hand full of talented and gifted swimmers who support Swim Across America, I will once again spend the morning at Dana Farber visiting with young children who have cancer. Two days later on Saturday July 15th, I will be participating in a COLD water (sub 65 degrees), one-mile swim at Nantasket Beach in Hull, MA. This swim is not about finishing first, it is about raising money for the children who so bravely fight cancer.

Forest Grove educator to retire after 46 years

An incredibly lucrative year for the shock jock, thanks to his rich contract with Sirius Satellite Radio, which pays him $100 million annually. (Stern pays all the production costs for his show.) The company also awarded him a one-time $225 million bonus in Sirius stock for meeting subscription benchmarks. Triple Eight Distillery's 4th Annual 8/8 @ 8pm Countdown

Triple Eight Distillery is broadening the tradition of their islandwide 888 Vodka Toast to include restaurants and liquor stores throughout the east coast. 88 establishments will participate this year.

At precisely 8pm ESTD on August 8th drinkers throughout New England will raise their glasses and salute a fine American distillery. Bartenders will hop up on their bars and read an ode to all things Nantucket , especially Triple Eight Vodka.

This year's signature cocktail will be Nantucket Tea, a new creation that is sweeping the island this summer. Start with equal parts Triple Eight Vodka and Triple Eight Orange, fill with Nantucket Nectars Lemonade, a splash of cranberry juice and float a dash of Hurricane Rum. The result is an irresistible cocktail with a Nantucket Red hue and a wonderfully refreshing flavor. Small samples will be passed to patrons just before 8pm on 8/8. When the clock strikes 8 O'clock down the hatch!

To make sure everyone is coordinated official Triple Eight countdown clocks will be placed at select restaurants throughout New England .

Folks all over are encouraged to participate. You don't need a countdown clock or a bar, just a bottle of 888 and some good friends. Last year people called the distillery from as far away as California to let us know they were throwing their own 8/8 @ 8pm party!
Welcome to another edition of ON TAP, the newsletter for friends of Cisco Brewers, Triple Eight Distillery and Nantucket Vineyard. We are gearing up for another great season on Nantucket. We have been busy all winter crafting fine libations for your enjoyment. We have also started construction on our new distillery.

We hope to see you all at the brewery soon and in the mean time go out to your local liquor stores and restaurants and request some of our fine products. Your consumer demand is what has allowed us to continue to grow off-island and broaden our offerings both on Nantucket and throughout New England.

Back to Pedro: I don't think the Red Sox should have matched New York's offer of $54 million over four years. That was absolute insanity. But if they made one mistake over the past three years, it was the way they handled Pedro's situation after their much-ballyhooed pursuit of Curt Schilling. How can you spend that much time, energy and money pursuing one star pitcher, sign him to a lucrative extension, include an incredible eight-figure bonus clause for winning the World Series ... and then tell your incumbent franchise pitcher, "Let's talk after next season when you're a free agent, maybe we can work something out." If you were Pedro, would you have taken the hometown discount to stay after that? Hell, no. If anything, you probably would have signed somewhere else and been extra-motivated to stick it to them.
