Closure in Cold Case


WORCESTER— A 23-year-old cold case involving the murder of 79-year-old Lillian Johnson of Main South came full circle yesterday with the arrest of a New York man on a warrant charging him with the slaying he had been questioned about shortly after it occurred.

Deep-Fried Turkey



1 (10-pound) turkey
2 tablespoons House seasoning, recipe follows
2 tablespoons of your favorite dry rub
3 to 5 gallons peanut oil
Cooks Note: To measure the amount of oil needed to fry the turkey, place turkey in fryer, add water to top of turkey, remove the turkey and the water line will indicate how much oil will be needed to fry your turkey. Having too much oil can cause a fire. The pot should not be more than 3/4 full or the oil could overflow when the turkey is added.

Wash bird inside and out, and allow to drain. Rub turkey all over with House Seasoning. Coat turkey with dry rub. Allow the bird to sit until it reaches room temperature.
Heat peanut oil in a turkey fryer or a very, very large stockpot to 350 degrees F. Lower turkey into hot oil, very carefully, making sure it is fully submerged. Fry turkey for 3 minutes per pound plus 5 minutes per bird. Remove turkey from oil and drain on paper towels.
Serve with favorite Thanksgiving sides and salads.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

2008 Red Sox Schedule

The Sox and Yankees have three weekend series at Fenway Park, April 11-13; July 25-27; and the final three games of the regular season, Sept. 26-28. Boston travels to Yankee Stadium for a four-game weekend series, July 3-6, and a pair of mid-week series, April 16-17 and Aug. 26-28.


Boston’s first home stand, scheduled to run April 8-13, features three games each with the Tigers and Yankees. The Red Sox have a pair of nine-game home stands, June 3-12 with Tampa Bay, Seattle, and Baltimore, and July 25-Aug. 3 with the Yankees, Angels, and A’s.


Boston will have 18 games versus National League opponents, hosting Arizona, Milwaukee, and St. Louis for three games apiece while playing three-game series at Cincinnati, Houston, and Philadelphia. It will mark the Brewers’ first visit to Boston since moving to the National League in 1998.


The Red Sox have scheduled the majority of their home day games (including Sundays) at 1:35 p.m. for 2008. The exceptions will be the home opener on Tuesday, April 8, with Detroit (2:05 p.m.) and Patriots Day on Monday, April 21 with Texas (TBA). Times for all Saturday home games will be determined once the Fox national television schedule is announced.


The Red Sox do not play at Fenway on Mother's Day, Father's Day, Memorial Day, Flag Day, Independence Day, and even Bastille Day and Labor Day.

Roasted Bone-in Rib-Eye for Two


1 (48 to 52-ounce) bone-in rib-eye
2 tablespoons kosher salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon olive oil
Creamed Spinach, recipe follows
Potato Gratin, recipe follows

Preheat the oven to 375 degrees F.
Set a 10-inch saute pan over medium-high heat. Season the steak with the salt and pepper. Add the oil to the pan, and, once hot, place the steak, fat side down, in the hot pan. Sear the steak until well caramelized and most of the fat has rendered, about 5 minutes. Turn the steak over and sear for 5 minutes on each of the other 3 remaining sides. Once seared on all sides, place the steak on a small baking sheet and roast in the oven until an instant read thermometer inserted into its center registers 135 degrees F, about 1 hour.

Remove the steak from the oven and allow to rest for 10 minutes before slicing in half, and slicing each half into strips that run across the grain. Serve with the Creamed Spinach and Potato Gratin.

Creamed Spinach:
1 teaspoon unsalted butter
2 1/2 pounds fresh baby spinach, rinsed
1/2 cup water, or as needed
2 cups heavy cream
2 tablespoons cornstarch
1/4 cup milk
1/2 cup grated Parmigiano-Reggiano
1 teaspoon salt
1/4 teaspoon ground white pepper
1/2 packed cup grated sharp or medium Cheddar

Preheat the oven to 400 degrees F. Lightly grease a 4-cup baking dish or ramekin with the butter and set aside.
Place the spinach and enough water to cover the bottom of a large skillet or saute pan over medium heat, cover tightly, and cook, stirring occasionally, until completely wilted, 5 to 7 minutes. Drain in a colander and set aside.

Bring the cream to a low boil in a medium saucepan. Remove from the heat. Whisk the cornstarch and milk in a small bowl until smooth to make a slurry. Add the slurry to the hot cream and return to medium heat, whisking until the mixture thickens and starts to boil, about 1 minute. Add the Parmesan, salt, and pepper and whisk until smooth. Add the cooked spinach and, stirring constantly with a wooden spoon, return to a boil, about 1 minute. Remove from the heat.

Pour the spinach into the prepared baking dish, sprinkle the Cheddar evenly over the top, and bake until the cheese is melted, 5 to 6 minutes. Serve hot.

Yield: 6 to 8 servings



Potato Gratin:
1 quart heavy cream
6 egg yolks
Salt
White pepper
Butter, for dish
3 pounds Idaho potatoes, peeled and thinly sliced vertically
1 pound Gruyere, grated

Preheat the oven to 400 degrees F.
In a mixing bowl, whisk the cream and yolks together. Whisk well. Season with salt and pepper. Butter a square baking dish. Lay a layer of the potatoes over the bottom of the pan. Season the layer with salt and pepper. Sprinkle with 1/8 of the cheese. Ladle 1 cup of the cream mixture over the cheese. Lay another layer of the potatoes over the cream mixture. Using your hands, firmly press the layers together. Repeat the above process with the remaining ingredients. Place a piece of parchment paper over the potatoes and cover with foil. Place in the oven and cook for 30 minutes. Remove the foil and continue to cook for 15 minutes, until golden brown and bubbly on the top. Remove from the oven and cool slightly before serving.

Yield: 6 to 8 servings

The Twins Have Arrived



Hello Everyone!

We would like to inform you all that we have welcomed into the world, Isabella Reese Cleary (4lbs 13oz) and Sophia Hope Cleary (2lbs 12oz) at 8:22am and 8:23am.
Mom and girls are doing well. Both babies were taken up to the Neo-Natal Intensive Care Unit to be examined and stabilized after delivery.

Both girls are in the same room. Sophia believe it or not is not on a respirator or breathing apparatus whatsoever. Isabella (the bigger of the two) has a small tube inserted into her throat to provide some oxygen. The Doctors have said that she will most likely come off the tube by the end of the night.

Other than that, the babies look good and are doing quite well.

I want to thank you for all of your thoughts and prayers! All the support that’s been provided is overwhelming and we want to thank each and every one of you!!
